Peperoni Arreganati

Garlic, oregano, capers and extra virgin olive oil

Ingredients For 4 pax

Red, Green and Yellow peppers

Extra virgin olive oil

Salt and pepper

Oregano

Capers

1 garlic clove sliced very fine

Basil

Fresh oregano

Method

Preheat the oven to 220 degrees c. Rub a little extra virgin olive oil on the peppers and place them in a roasting tray, cook them until the skin starts to glisten and they have a really wonderful tinge of Dark brown colour to them. Remove from the roasting tray and place in a bowl, cover with plastic wrap and leave for about 30 minutes.

Remove the plastic wrap from the bowl and start to skin the peppers. The skin should be very easy to remove, deseed and cut into thin strips and place in a clean bowl. Add the extra virgin olive oil, oregano, basil, garlic, capers, salt and pepper and toss until all combined. Let the flavours infuse, serve with Italian Cold Cuts and crusty bread
