Giardiniera Rustica

Ingredients

6 carrots sliced on an angle

6 celery stalks sliced on an angle

1 cauliflower head cut into florets

4 red pepper cut into strips

500gr mushrooms cut into quarters

500gr of small pickling onions

1 turnip roughly cut

1 part red wine vinegar

1 part water

3 garlic cloves whole

1garlic clove sliced

½ cup of salt

Extra red wine vinegar

Extra virgin olive oil

Parsley chopped

Basil leaves

4 Red Chilli

Method

Place the water, vinegar, ½ of the salt and garlic in a large saucepan, Bring to the boil and add all the ingredients, except the sliced garlic, the extra virgin olive oil the extra vinegar and the chilli. Blanch for about 10 minutes. Remove some of the water and save. Strain the vegetables and let cool down. Place in a large recipient add the saved liquid, add the vinegar, the extra virgin olive oil, red chilli sliced on an angle, parsley and basil. Check the seasoning, adjust accordingly.
