Bruschettine, bufala e pomodorini, basilico ed olive

Cherry tomato, Basil, garlic, bufala and olives

4 for pax

Ingredients

300gr cherry tomatoes cut in half 5 tablespoons extra-virgin olive oil a pinch of dried oregano 5 basil leaves

Salt

Freshly ground black pepper Ciabatta or other rustic bread,

2 garlic cloves, 1 clove finely chopped the other cut in half 1 buffalo mozzarella sliced in rounds

Method

Place the cut cherry tomatoes in a large bowl add the salt, pepper, garlic, oregano, basil and combine well. Squash a few to get extra flavor and Let marinate for at least 1 hour. slice the buffalo milk mozzarella in thickish..

Cut the bread into 1 inch thick slices, rub with garlic and toast or grill until fragrant without burning the edges. Place the buffalo mozzarella rounds on the bread, place a spoonful of the cherry tomato salad on top of the bread, making sure it is all covered, drizzle with a little extra virgin olive oil, grind some fresh pepper over it and garnish with olives and a few basil leaves
