This food truck makes some of the best Mexican food
Ingredients
2 medium onions diced small
1 clove garlic crushed finely
Olive oil
2 teaspoons of good chili powder
Ground cumin
Ground coriander
A handful of fresh coriander leaves on stalks
Sea salt
Freshly ground black pepper
600 gr of minced Angus chuck
2 cans of chopped Italian tomatoes
1 fresh red chili finely chopped
60 gr of tomato paste
1 can of red kidney beans, drained
1 can of butter beans, drained
Lemon wedges
Method
Place a pot large enough to accommodate all the ingredients in on the stove-top, add a little oil and once hot, add the chopped onion and garlic, once fragrant add the minced beef and saute well.
Season with salt and pepper, add the cumin, coriander and the chilli powder and simmer for a few minutes.
Add the tomato paste and combine well, cook for about 7 to 8 minutes then add the fresh chilli and the chopped tomato, and 1 glass of water, cook for about 45 minutes to 1 hour on a faint flame with the lid on.
Uncover the pot, add the beans and cook for a further 15 to 20 minutes. Check the seasoning and serve at once with fresh coriander, lemon, chunky avocado, sour cream steamed rice and corn chips................
