Date and Macademia nut Cake

Ingredients

4 eggs

250gr of self raising flour

250gr of softened butter

250gr of brown sugar

5 drops vanilla essence

350gr of dates, pitted and chopped

4 tablespoons macadamia nut roughly crushed

Method

Cream the butter and sugar in a cake mixer on low speed, while still beating at low speed; add the vanilla drops and the flour, very slowly.




Turn up the speed and add the eggs one at time until they are all incorporated.

Fold in the dates and macadamia nuts.

Butter and lightly flour a 25cm cake tin and spoon the mixture into it.

Bake in a preheated oven at 170degrees C. for about 40 minutes and then drop the oven to 150degrees C. And cook until the cake is set.

The top should spring back to the touch.
