Rocket, Pear and Ricotta Salata

This is a gorgeous salad that it is best enjoyed when the Pears are sweet.

Ingredients

3 ripe pears, cored and cut into wedges

2 bunches of Rocket

Ricotta Salata

Extra virgin olive oil

a splash of honey

a little Balsamic vinegar

a squeeze of lemon

freshly ground pepper

Salt

Method

place the pears, in a large bowl with a splash of balsamic, extra virgin olive oil, lemon juice, honey, salt and pepper, toss well.

Crumble the ricotta salata with your hands, and add to the bowl, place on la rge serving plate and garnish with the arugula ...............
