Mio zio Ernesto e la minestra

Wholesome Minestra


This very wholesome soup with lots of of different bits and textures, is a one pot Soup and Main Course wonder..........

Ingredients

Borlotti beans

Cannellini beans

1 escarole head

Spinach

Wild rocket

A piece of Brisket

A Small hen

Cotechino

4 to 5 five tomatoes

3 carrots

2 onions

2 garlic cloves crushed

Extra virgin olive oil

Salt and pepper

1/2 cup tomato paste

Method

Heat the extra virgin olive oil in a large stockpot and add the onions that have cut into quarters, the carrots that have been cut into thirds and the garlic. Sauté until fragrant, add the tomato paste and combine well. Half fill the pot with water and add the meats and the beans. Simmer for 45 minutes skimming the top regularly. Add the greens and the tomatoes and bring to a gentle boil, turn the flame down and simmer for another 45 minutes. Season with salt and pepper and turn the heat off.

Remove the meat from the broth and place in a casserole in a warm oven; serve the meat with the vegetables as a main course with a lightly dressed salad after serving and eating the soup

Serve the soup with crusty old bread, Parmigiano and a drizzle of extra virgin olive oil
