This recipe is a combination of old traditional with today’s taste.
It does not require extreme ingredients apart from excellent old crusty bread, extra virgin olive oil and firm but ripe tomatoes. Add a few other ingredients and you have a fantastic, flavoursome salad that can be used on its own as a salad or as an accompaniment to fish or chicken alla griglia
Ingredients
Crusty old bread cut into slices then into large cubes
Extra virgin olive oil
Anchovy fillets
Capers
Red onion thinly sliced
1 garlic clove crushed
1 red pepper seeded and cut into thin strips
1 cucumber peeled and diced
3 Firm ripe tomatoes diced
2 tomatoes squashed and seasoned
Red wine vinegar
Basil finely cut
1 pinch of oregano
Sea salt

Method
Place the anchovies, capers and garlic in a small bowl and with the back of a fork mash to a pulp.
Place bread in a bowl large enough to toss all the ingredients together.
Soak the bread with the squashed tomatoes, salt and a little extra virgin olive oil and let steep for about 30 minutes. Remove the squashed tomato from the bowl and add the diced cucumber, the red onion, the anchovy mixture, the red pepper, the red wine vinegar, toss until all combined. At this stage add a little more extra virgin olive oil, the basil, oregano, sea salt and a good grinding of pepper toss thoroughly,
