Piselli, Menta e Burro

Minted Peas

I love peas, and the more sweet, buttery and minty they are, the more I love them


This is a fantastic recipe, it is quick and simple.



Ingredients


2 tablespoons olive oil 1/2 bunch of spring onions, cut on an angle

1 handful of fresh mint, leaves picked, and washed 500 gr of good quality froze peas 50 gr of butter Salt

Freshly ground black pepper



Heat the oil in a pan and add the chopped onions and peas.


Cover and leave for a few minutes to steam. Remove 1/2 from the pot and mash the remaining with a potato masher, do not over do it just a few swift bashings.


Return the other peas to the pot, add the butter and the mint and let simmer for a few minutes, adjust the seasoning and serve with roast lamb, chicken or battered fish
