Ricotta Balls

Ingredients


Ricotta

Eggs

Sugar

Vanilla beans

Flour

lemon zest

Orange zest


Caster sugar

Vanilla sugar


Method


Place the ricotta and sugar in a mixing bowl and whisk until smooth, add the vanilla bean, eggs, orange and lemon zest and mix for a few minutes, until it is well combined add the flour and fold in without over doing it...............


Place a large saucepan on the stop-top, three quarter filled with good vegetable oil, once it reaches 170 degree celsius with an ice-cream scoop, form balls and fry for a few minutes, until golden in colour....


Toss in a bowl with the caster and vanilla sugar
